This extraordinary pepper comes from a strictly protected nature reserve in the highlands of the Malabar Coast in the state of Kerala in southwestern India. It is grown by rural producer communities who live far away from civilization. The area is known for its biodiversity, which includes tigers and elephants.
Due to the traditional cultivation method, the harvest quantities of this pepper plant are low, but the levels of essential oils and other flavor and aroma compounds are particularly high compared to other pepper varieties. The pepper is harvested by hand and dried in the sun.
