This elegant, aromatic, refreshing mastic liqueur with lemon brings a revolution for the senses and the palate. Enjoy it chilled as a shot, in cocktails, or as a digestive drink after dinner.
The mastic tree (Pistacialentiscusvar. Chia) is an evergreen shrub that grows 2-3 meters tall. Its lifespan is more than 100 years. Before the process of obtaining the liqueur begins, the weeds, leaves, and soil are removed from the ground. Then comes the "asprochomatisma," or the covering of cleaned soil with white, fine sieve soil, which is collected from nearby areas and is then ready to absorb the "mastic tears." The scratching of the tree (gr. "Kentima") is a special process that has remained virtually unchanged for centuries. A sharp tool called "Kentitiri" is used. It looks like a curved pickaxe. The resin of the tree slowly drips onto the sand and hardens there. The collection must be completed before the first rains begin. The "tears" are cleaned and then processed into a wonderful liqueur.
